Monday Night Dinner
Last night was dinner all by my lonesome.
I had an extra piece of flank steak from the package I bought for Sunday dinner. I know it can be a tough cut of meat. I made a marinade of bourbon/dijon mustard/salt & pepper/brown sugar/Worcester sauce. I wasn't sure how it would work, but said WTH. I let the meat sit in the marinade for an hour. Served it over Jasmine rice. I had some left over veggies in the fridge so i chopped them all up and drizzled with garlic/thyme/rosemary/salt/pepper/balsamic/EVOO and roasted them in a aluminum foil puch in the oven. YUMMMM!!
